Tortelli d'Erbetta
Featuring the king of cheeses, Parmigiano Reggiano, along with fresh, creamy ricotta and spinach, this is the emblematic pasta dish of Parma, Italy. Surprisingly light, this will leave your palate feeling clean and refreshed.
So special is this dish in the Parma region that it has own yearly festival. And like many Italian delicacies, it has as many variations as there are families that make it. This version, having no written recipe, is that served in the restaurant where I worked during my time in Italy.
Tagliatelle Bolognese
Originating from the city of Bologna, Italy, this dish is a typical example of elevating humble ingredients to an exquisite level. It starts with a rich ragu that is carefully simmered to celebrate its meaty goodness. Paired with handmade wide cut pasta and finished with a sprinkling of grated parmigiano reggiano cheese, this dish is considered by some to be one of the greatest comfort foods in the world.
Porchetta
Originating from central Italy, this roast pork is the centerpiece of many family celebrations and town festivals. Typically served in panini (Italian style grilled sandwiches), or as part of a complete meal, porchetta is recognized in Italy as a food product with unique traditional and cultural significance. This rendition, meltingly tender, is served with a rich pork and white wine sauce. Accompanied by roasted vegetables and garnished with a crispy pork cracklings, this porchetta is unbelieveably good.
Pizza
One of the most favorite foods in the world. Originally a peasant dish, pizza now sports as many variations as there are countries, regions, and cities. With a crust of a crisp surface and a tender chew, pizza serves as the platform upon which even the humblest of fresh ingredients can be transformed into something that delights diners both young and old.
